A Secret to Shatter by Katie O’Connor

Air Buns

1 teaspoon sugar

½ cup warm water

1 package dry yeast

½ cup sugar

½ cup butter or margarine

1 teaspoon salt

2 tablespoons vinegar

3 ½ cups warm water

8-10 cups all-purpose flour

Dissolve 1 teaspoon sugar in water. Sprinkle in yeast.

Let stand 10 minutes.

Mix yeast mixture, ½ cup sugar, shortening, salt, vinegar, and water in large bowl.

Knead well. Let rise 2 hours.

Knead again and let rise 1 hour.

Knead and form into buns.

Let rise. Rise time will depend on ball size.

Bake at 350-degrees for 20 minutes.

Note: This was my mother-in-law’s favorite dinner roll recipe. When she baked them, they were fabulous. When I bake them, they’re edible. Bread and bun baking aren’t my gift. I’m hoping you have better luck.
